Sail's Solomua sets standards

Head Chef Solomua Fa'amanu, at Sails Restaurant in Samoa, is setting standards for others in the industry to follow.

Mr Fa'amanu is earning a reputation for his creativity and workmanship, as well as for his work ethic.

Mr Fa'amanu has earned the praise of his employer, restaurateur Ms Lyvia Black, who said that in the hospitality industry there is a need for workers like Mr Fa'amanu who show initiative and demonstrate good work ethics.

Not only does the APTC cookery graduate arrive at work before time, he also stays after work to experiment with new recipes. To help with his experiments, and as a cost-cutting exercise, Mr Fa'amanu has his own herb garden behind the restaurant.

"I think if you genuinely enjoy what you're doing, and you're passionate about it, then you keep trying to find ways to improve on it," said Mr Fa'amanu.

APTC is an Australian Government initiative in partnership with the Pacific and Timor-Leste.
